Brady Williams’ Pimento Cheese Sandwich

Ingredients

  • 8 oz diced pimento peppers
  • 4 oz diced piquillo peppers
  • 4 oz Mama Lil’s peppers
  • 1/2 cup Duke’s mayonnaise
  • 6 oz cream cheese
  • 1/2 tsp Tabasco
  • 1/2 tsp kosher salt
  • 1/2 tsp cane sugar
  • 1/4 tsp smoked paprika
  • 1/8 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1/4 cup bread and butter pickle brine
  • 1/2 lb grated Tillamook sharp cheddar
  • 1/2 lb Beecher’s Flagship cheddar
  • 12 slices shokupan (Japanese milk bread)

 


 

Method

  1. Build the base
    In a large bowl, combine mayonnaise, cream cheese, Tabasco, salt, sugar, paprika, cayenne, and black pepper. Whisk until smooth and fully integrated.
  2. Add acidity and depth
    Stir in the bread and butter pickle brine. This should brighten the mixture without thinning it too much.
  3. Fold in peppers
    Add diced pimentos, piquillos, and Mama Lil’s peppers. Mix gently to distribute evenly.
  4. Incorporate cheese
    Fold in both cheddars until fully combined. The texture should be creamy with some structure.
  5. Rest
    Cover and refrigerate for at least 1 hour to allow flavors to meld.
  6. Assemble
    Generously spread the pimento cheese onto toasted slices of shokupan. Top with another slice and (optional) trim crusts for a clean finish.

Notes
